I am not a long distance rider as you are. I would say the bike is best suited for its "commuter" use and it's great fun on tight, twisty two-lane roads. I've even taken my CB500F to two instructional motorcycle track days.

I would not recommend the CB500 series for long distance interstate travel (65mph and up). It is designed to turn-in quickly and I want straight-line stability on the interstate. A bike designed more as a long distance cruiser will be more relaxing to ride for hours.

and you probably would find a 650 engine feels more relaxed than a 500 at those speeds.
 
The 500 series all have the same engine.
As a bike sold globally, its power is limited to meet European beginner licensing requirements. And it's designed to run on the worst regular gas found anywhere on the planet.

Heresy! how about the Suzuki SV650 ?
It's a twin with more power, not super high revving, not expensive.
