I think you would be disappointed. I love my 2013 CB500F, but only in clean air. Once in disturbed air like on the interstate or from following vehicles on two lane highways, I stop having fun. There's not much overtaking power in the 471cc motor. You have to plan, drop a couple of gears and get a run at it. The 650 I'm sure is better, but it seems like that little four cylinder needs to be kept quite high in the rev range to make use of the power. That's hardly a touring characteristic. For what you're describing, I'd pick the CB500X/NX500 over the 500F. I also have a 2015 CB500X. It is a more upright position than the F, and I can go longer on it. I was starting to get pinch pains in my shoulder and hip from long rides on the F. I still use it to run around the twisties, but a couple of hours and I'm done with it. And that's with a Corbin seat. I would put the NC750X back in consideration since I think it would be better for you than the 500s, if you can handle the low rev limit of it. The fuel mileage is unmatched though. The unicorn for you would probably be the new 750 Transalp and maybe even the Hornet if you want something sportier.
 
But aren't the 500's all pretty much the same drivetrain/similar weights?

I wish the 750 Hornet were available here.

Unfortunately my budget screams used bike. I'm trying to get this done for under $5K (I know), but. A couple Yamaha's are on my list - 7s and 9s, and a Kawasaki.
I just came home from a 900 mile 2 day roundtrip on my ST1100. I have a feeling that anything other is going to be disappointing anyway!

Yes, what I am saying is that there is a noticeable difference between the seating position and comfort between the F and the X. Plus, there are more options for windscreens for the X. Just get some good test rides in if you can and don't be too quick to get rid of that 1100. Keep 'em both a bit until you are absolutely sure you can do without the other. Good luck!
